Our garden is abundant with kale. And while we know you can blend it into smoothies, throw it into omelettes, quiches, lasagnas, or soups, why not enjoy it by itself? This simple side dish is a great complement to any meal. Plus, it cooks down so much you can actually make a dent in the huge bunch of kale you just bought, harvested, or received in your CSA box!
2 cloves garlic, thinly sliced
6 cups of thinly sliced kale
1T apple cider vinegar
Salt and pepper to taste
1. Melt the butter in a frying pan over medium heat. Add garlic. When fragrant (about 10 seconds), add kale.
2. Sautée until the kale has wilted then add apple cider vinegar. When soft, add salt and pepper to taste.
